Mango & Spicy Shrimp Salad

INGREDIENTS
1 mango, diced
1 cucumber, diced with seeds removed
1 avocado, diced
1/2 red onion, diced
2 limes, for juice
Salt & pepper to taste
1 teaspoon dry jerk seasoning powder
1 red bell pepper, diced
2 Tablespoons olive oil
1 lb. shrimp, peeled & deveined (16 - 20 count)
1 bunch cilantro chopped
1/2 teaspoon fresh ginger, grated
1 tomato, diced with skin and seeds removed

DIRECTIONS
Place all diced items into a bowl except for the avocado.
Dust shrimp with jerk seasoning.
Heat olive oil in a sauté pan over medium-high heat.
Cook shrimp.
Allow shrimp to cool, then add to bowl.
Add remaining ingredients. Mix well, adding salt & pepper to taste.
Fold in avocado.
