Crab & Cheese Supreme

1 stick butter
4 TBS flour
1 clove garlic, chopped
1/2 cup chopped celery
1 medium onion chopped
1 8 oz can mushrooms
1 1/2 lb shredded cheddar cheese
1/2 tsp salt
1/2 tsp red pepper
1 cup cream
2 pounds crabmeat
1/2 cup breadcrumbs

Preheat oven to 250 degrees.
Melt butter, sauté flour lightly.
Add onions, celery and garlic. Simmer until veggies are opaque.
Add cream slowly. Stir constantly, simmer until thick.
Add mushrooms, 1 lb cheese, salt and pepper. Stir constantly until cheese is melted.
Add crabmeat & breadcrumbs.
Place in buttered casserole dish. Top with remaining cheese.
Bake until cheese is melted.
