SPICY TUNA TARTARE NACHOS

INGREDIENTS
For baked wonton chips:
12 wonton wrappers (3 1/2” square size) cut into triangles
1 Tbsp. extra virgin olive oil
1 tsp. freshly squeezed lime juice
Flaky sea salt
White sesame seeds
For Sriracha sauce:
1 Tbsp. really good mayonnaise
1 tsp. sriracha sauce
1 tsp. freshly squeezed lime juice
For spicy tuna tartare:
5 ounces sushi grade ahi tuna
2 Tbsp. minced shallots about one small shallot
1 Tbsp. low-sodium soy sauce
2 tsp. freshly squeezed lime juice 1/2 a lime, or to taste
2 tsp. sesame oil
1/2 tsp. sriracha or to taste
Small pinch ginger powder
Salt to taste, if desired
Additional toppings:
1 avocado cut into slices or chunks
Black sesame seeds
Chopped scallions
Fresh jalapeño slices
