Grilled Mahi-Mahi Fillets in Ginger Marinade

INGREDIENTS
2 lbs. mahi fillets
2 TBSP. olive oil
2 TBSP. fresh ginger, minced
1 TBSP. garlic, minced
1 TBSP. fresh lime juice
1/4 cup soy sauce
2 TBSP. honey
2 TBSP. dry red wine
1/8 tsp. cayenne pepper
Salt and pepper

DIRECTIONS
Heat grill to 475 degrees.
In a one gallon ziplock bag, combine all ingredients except mahi.
Mix well, then add fish, seal bag, refrigerate at least 4 hours or overnight.
Spray grill with cooking spray.
Cook fillets about 4 minutes on first side, then turn and cook another 2-3 minutes, depending on the thickness of the fish.
Serves 4.
