Pan Seared Flounder with Peaches and Cucumber Salsa

INGREDIENTS
3 peaches, finely diced
1 small cucumber, peeled, seeded, finely diced
1/2 red onion, finely diced
1/ jalapeno pepper, minced
1/2 bunch cilantro, finely chopped
Juice of 1/2 lime
Salt and pepper

For the Fish
4 flounder fillets
Salt and pepper
2 TBSP. extra-virgin olive oil

DIRECTIONS
Salsa
In a large owl, combine all of the ingredients.
Cover and refrigerate until ready to serve.

Fish
Heat the oil in a nonstick skillet over high heat.
Season fish with salt and pepper.
Sear the fillets until opaque in the center, 3-4 minutes per side.
Transfer the fish to a platter and top with some of the salsa and serve any extra on the side.
Serves 4
