INGREDIENTS
2 TBSP. orange zest
1 TBSP. brown sugar
2 tsp. garlic, finely minced
2 tsp. dry mustard
2 tsp. ground cumin
1 tsp. dried basil
½ tsp. ground chipotle chili
2 tsp. salt
4 tuna steaks (1 ½ in thick)
2 tsp. canola oil
2 medium oranges, sliced
DIRECTIONS
Make the rub in a small bowl by mixing the first 8 ingredients.
Pat the spice rub all over the tuna steaks.
Cover and refrigerate one hour before grilling.
Preheat the grill to be very hot.
Drizzle the tuna and orange slices with oil.
Place the tuna on direct high heat.
Place the oranges to the side at medium heat.
Sear the tuna first side 2 minutes, turn over and sear the other side 1 minute.
Remove both the oranges and tuna and arrange on platter.
Serves 4.
