Grilled Tuna With Herb Vinaigrette

INGREDIENTS
4 (8 oz.) tuna fillets
1 tsp salt, divided
1/2 tsp pepper
2 shallots, minced
1/2 cup olive oil, divided
2 TBSP white wine vinegar
1 TBSP Dijon mustard
1/4 tsp sugar
1 TBSP fresh chives, chopped
1 TBSP fresh parsley, chopped
1 TBSP fresh tarragon, chopped
1/8 tsp. crushed red pepper (optional)
Vegetable cooking spray

DIRECTIONS
Sprinkle tuna with 3/4 tsp salt and 1/2 tsp pepper.
Sauté shallots in 1 TBSP of hot oil for 5 minutes or until golden. Remove from heat.
Wisk together vinegar and mustard in a small bowl.
Whisk in remaining oil in a slow, steady stream until mixture is thickened.
Stir in shallots, remaining salt, sugar, herbs, and crushed red pepper, if desired.
Coat cold cooking grate with cooking spray.
Place on grill over high heat and grill for 5 to 7 minutes on each side.
Serve with vinaigrette.
