INGREDIENTS
1 1/2 pounds fillets
4 tsp grated fresh ginger
1 tsp grated lime peel
1/4 tsp salt
1/4 tsp freshly ground pepper
1/4 cup all purpose flour
1 TBS vegetable oil
Vinaigrette:
6 TBS olive oil
2 TBS lemon juice
2 TBS orange juice
2 TBS lime juice
2 TBS Dijon
DIRECTIONS
Preheat oven to 350 degrees.
Rub one side of fillet with ginger and lime peel, then sprinkle with 1/4 tsp salt and 1/4 tsp pepper.
Place flour in shallow bowl. Dip fillets in flour; lightly shake off excess.
Heat large ovenproof skillet over high heat until hot.
Add oil; heat til hot.
Add fillets, seasoned side down; cook 3 to 4 minutes or until golden brown, turning once.
Place in oven; bake 6 to 8 minutes or until fish just begins to flake.
Meanwhile, in blender, combine all vinaigrette ingredients. Blend until combined.
Drizzle over each serving plate; top with fillet.
