Fried Flounder Foccia Breac Sandwich

INGREDIENTS
1 whole sandwich made for two (10 inch round)
2 five oz. flounder fillets
1 1/2 cups of Panko -   Japanese breadcrumbs
1/2 tsp of cajun seasoning
2 eggs
1/4 cup milk
1/2 cup flour
Corn oil
2 ounces tartar sauce
4 thick slices of tomatoes
4 slices of red onion
Leaf greens

DIRECTIONS
Season the bread crumbs with the cajun seasoning, set aside in a bowl.
Whisk 2 eggs with 1/4 cup of milk, set aside.
Place flour in separate bowl. Dust both sides of flounder with flour, then drench in egg mixture, then coat with breadcrumbs.
In a heavy skillet fill bottom with a 1/2 inch of corn oil and bring to a medium heat.
Fry both sides of fillets until golden brown. Keep warm & set aside.
Cut the foccia bread in half, creating a top and bottom piece.
Spread tartar sauce evenly and build your sandwich: tomato, greens and red onion. Salt, pepper and oregano, optional.
