INGREDIENTS
For the Marinade
1 red onion, roughly chopped
1 ½ tsp. dried thyme
2 scallions, only green tops, chopped
1 tsp. allspice
½ tsp. cinnamon
1 TBSP. white pepper
¼ tsp. nutmeg
1 jalapeno, chopped
2 TBSP. olive oil
3 tsp. sea salt
For the Fish
4 mahi-mahi fillets
Salt
DIRECTIONS
Place all marinade ingredients into a food processor and process for 15 seconds.
Season the fish with salt and spoon 2 tsp. of the jerk marinade on each side.
Place on a hot grill and turn heat down to medium.
After 2 minutes, turn over and cook 3 to 5 minutes, until fish is cooked through.
Serves 4.
