INGREDIENTS
1 lb. mahi-mahi fillets
Marinade:
½ cup olive oil
½ cup soy sauce
1 TBSP. onion powder
½ tsp. pepper
2 cloves garlic, crushed
½ cup finely chopped onion
8 oz. sliced mushrooms
DIRECTIONS
Rinse fish and place in zip lock bag.
Pour marinade over fish, making sure marinade covers and surrounds fish.
Place in refrigerator for 1 to 4 hours.
Spray glass casserole dish with cooking spray.
Arrange sliced mushrooms on bottom of dish and place fish and marinade on top.
Bake in a 350 degree oven until fish flakes easily when tested with a fork.
Serves 4.
