Creamy Mahi Mahi

INGREDIENTS
3-4 mahi fillets
2 garlic cloves, finely minced
½ teaspoon lemon zest
¼ teaspoon red pepper flakes, optional
1 teaspoon garlic powder
1 teaspoon paprika
2 tablespoons olive oil
1 tablespoon butter
1 cup heavy cream
1 tablespoon capers
1 teaspoon lemon juice
2 tablespoons parmesan cheese, freshly grated
Salt and pepper to taste

DIRECTIONS
Pat dry the fillets with a paper towel. Season with salt, pepper, garlic powder, and paprika.
Heat oil in a large skillet over medium heat. Add the fish to the skillet and cook for 2 minutes on each side. Remove the fish from the skillet and set it aside.
Add the butter, garlic, red pepper flakes, capers, and lemon zest. Saute for 10 seconds and then add the heavy cream and parmesan cheese. Cook for 1-2 minutes or until the sauce thickens.
Once the sauce thickens add the lemon juice, check for seasoning, and add salt and pepper if needed.
Place the fish back into the skillet, cover, and cook for 1-2 minutes or until the fish is fully cooked through.
Garnish with parsley, if desired, and enjoy!
