INGREDIENTS
4 kingfish fillets (5 oz. each)
Salt & pepper to taste
2 tablespoons olive oil
4 tomatoes
1 onion
1 bell pepper
1/4 cup fresh cilantro, chopped
2 limes, juiced
Additional herbs for garnish
DIRECTIONS
Season kingfish fillets with salt, pepper, and a drizzle of olive oil.
Cook the fillets on a hot barbecue or grill pan until golden and flaky.
Char tomatoes, onions, and bell pepper on the grill; then chop and mix with cilantro, lime juice, and seasoning.
Place the grilled kingfish on plates, top with the charred tomato salsa, and garnish with extra herbs.
