INGREDIENTS
4 large flounder fillets
1 TBSP. lemon juice
2 TBSP. butter
2 TBSP. dry white wine
Vegetable Stuffing:
1/2 cup chopped celery
1/4 cup chopped onion
1/3 cup chopped green pepper
1/4 cup thinly sliced carrot
1/4 cup butter
1 cup soft bread crumbs
1 cup chopped tomato
1 TBSP. minced parsley
1/2 tsp. dill weed
Salt and pepper to taste
Lemon slices
DIRECTIONS
Lay the fillets in a well buttered shallow baking dish.
Lightly cover with stuffing.
Drizzle the wine over the stuffing and dot with butter.
Cover the dish and bake in a preheated 350 degree oven for 20 minutes.
Uncover and cook another 10 minutes.
Check with fork for doneness.
Garnish with lemon slices.
Saute the celery, onion, green pepper and carrot in butter for 10 minutes.
Add rest of ingredients and mix well.
Serves 4.
