Weakfish with Madeira Wine

4 weakfish fillets
4 TBSP. Madeira
1 cup light cream
1 cup mayonnaise
1/3 cup finely chopped onion
1/2 cup chopped mushrooms
1 TBSP. lemon juice
Salt and pepper

Preheat oven to 350 degrees.
Place the fillets in a buttered baking dish.
Pour the Madeira over the fillets and allow them to marinate for 30 minutes.
Mix cream, mayonnaise, onion, mushrooms, lemon juice and salt and pepper to taste.
Pour over the marinated fillets, cover and bake for 25 to 30 minutes .
Baste once during the cooking if the fish is not covered by the cream.
Check for doneness by using a fork.
Serves 4.
